Tender Grass Fed Chuck Roast in the Instant Pot

This is a very simple roast that can be done in as little as 1 hour, depending on the size of your roast.

  • Grass fed chuck roast any size (mine was between 2 and 2 1/2 pounds)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp Tallow lard, avocado oil or coconut oil would work too
  • 2 cups bone broth, water or combination of the two


  1. Dry roast with paper towels

  2. Mix seasonings together and sprinkle on roast.

  3. Using saute feature on Instant Pot, brown the roast in tallow for about 5 minutes on each side. 

  4. Add bone broth/water, secure lid and pressure cook for 15 to 20 minutes per pound. I did a 2.4 pound roast for 45 minutes and it turned out great!

  5. Use quick release method to release all pressure from the instant pot. Remove roast and enjoy!

Recipe Notes

Total cook time may vary depending on size of roast and how long it takes your Instant Pot to reach pressure. Mine took 6 1/2 minutes to reach pressure. 

If your roast is 2 pounds or less and you cook it for 19 minutes per pound, this roast will be done in less than an hour. This includes prep, cook, and waiting for the pot to come to pressure! Now that's great news!
