Bacon Cheddar Scrambled Eggs

An easy way to get the kiddos to eat their eggs. Who said eggs had to be boring anyway?

Ingredients

  • 6 Slices Bacon pasture raised
  • 1 Tbsp Green onions/scallions chopped
  • 6 Eggs, scrambled in bowl pasture raised
  • 1/4 Cup Raw cheddar cheese, shredded pasture raised
  • 1/4 Tsp Salt and pepper

Instructions

  1. Chop bacon and add to pan over medium heat.

  2. Cook for about 10 minutes, or until browned and crispy. Remove bacon only (not grease) and let cool on paper towel lined plate

  3. Add green onions to pan followed by eggs. Cook, stirring occasionally until eggs are done.

  4. Turn off heat and add cheese, salt, pepper and bacon. Stir and serve. Can garnish with more green onion if desired. 

Recipe Notes

This makes about 2 cups of eggs. Roughly 1/2 cup serving per person.
