Mashed potatoes can be made many different ways. There are definitely times when a side of Bacon Cheddar Mashed Potatoes (recipe to come soon) sounds perfect! But sometimes, just regular ol’ mashed potatoes with a big pat of butter is going to hit the spot! Its pretty quick AND you don’t need a bunch of add-in ingredients. Sometimes I don’t peel the potatoes. A lot of the nutrients are in the peel and it gives it more of a bite. Just make sure you get them very clean before cooking them. Peeled or unpeeled, these mashed potatoes are simply delicious!
For this recipe you will need:
- 2 pounds potatoes
- 6 Tbsp butter
- 2 Tbsp cream
- 1 tsp salt
- 1 tsp pepper
Instructions:
- Peel and rinse potatoes.
- Cut into cubes. Try to keep the size of the cubes the same, this way they cook more evenly.
- Add the potatoes to a pot and cover with filtered water.
- Boil until fork tender and drain.
- Add the butter to the potatoes. For this part, I like to use a hand masher. After adding the butter, mash the potatoes but only go around the pan a couple of times. They don’t have to be completely mashed up just yet.
- Add the cream and go around the pan with the masher a couple more times.
- Add Salt and Pepper and mash a few more times until all ingredients are incorporated.
If you want super smooth mashed potatoes, just use an electric mixer. I like to keep mine with a little texture. Actually, sometimes I don’t even peel the potatoes.

Recipe Notes
I use the lid of the pot to drain the potatoes, this way I don't have to wash a colander.
No need for a mixing bowl, I like to use a hand masher and mash the potatoes directly in the pot. That's one less thing to clean up.
If you like your potatoes a little less lumpy, feel free to use an electric mixer instead.
These potatoes go great with my Super Simple Grain Free Meatloaf! I usually serve these two together and just steam a green veggie (broccoli or green beans) for a super simple meal 😛

I love grilled chicken breast and steamed broccoli to go with our mashed potatoes. Yum! It’s also a super simple meal. My favorite 😉
Mmmm! That does sound good!
