For the most part, my kids will eat anything I serve. Fruits, veggies, healthy fats, raw dairy and pasture raised animal protien, YES! A sweet dessert made with local honey or maple syrup? DEFINITELY! Eggs, on the other hand, are usually a struggle. A BIG struggle! Especially for my youngest. It may be a texture thing, I’m not sure.
What’s a Momma to do?
Eggs are the perfect breakfast food after all! Especially pasture raised eggs that come from happy chickens living outside in the sunshine on fresh green grass. Well, I took a few of their favorite foods, bacon and cheese, and I hid them in the eggs. Easy peasy!
This is how Momma Darlin makes scrambled eggs for her picky kiddos. Give it a try, you won’t be disappointed!
Bacon Cheddar Scrambled Eggs
For this recipe you will need:
- Bacon (pasture raised)
- Eggs (pasture raised)
- Cheese (pasture raised, raw)
- Green onion/scallions
- Salt and pepper
Directions:
Start by cutting the bacon into bits.

Add the bacon to the pan and let it cook for about 10 minutes on medium heat.


Turn burner to low. Using a slotted spoon, remove bacon and drain on paper towel lined plate. Be stronger than I am and try to refrain from eating any of the bacon bits! Its so much harder than it looks! Smells. So. Good!

Slice the green onions and add to the bacon grease in the pan. Let them dance for a minute while you crack the eggs in a bowl. Scramble the eggs up and add to the pan.

Cook your eggs for about 5 to 10 minutes on low. When they’re done, its time to add the tasty mix-ins!
Add some cheese, salt, pepper and, of course, the bacon! (hopefully there’s some left!)

I like to plate it and then add some more green onions. I just love those things!

Bacon Cheddar Scrambled Eggs
An easy way to get the kiddos to eat their eggs. Who said eggs had to be boring anyway?
Ingredients
- 6 Slices Bacon pasture raised
- 1 Tbsp Green onions/scallions chopped
- 6 Eggs, scrambled in bowl pasture raised
- 1/4 Cup Raw cheddar cheese, shredded pasture raised
- 1/4 Tsp Salt and pepper
Instructions

Chop bacon and add to pan over medium heat.

Cook for about 10 minutes, or until browned and crispy. Remove bacon only (not grease) and let cool on paper towel lined plate

Add green onions to pan followed by eggs. Cook, stirring occasionally until eggs are done.

Turn off heat and add cheese, salt, pepper and bacon. Stir and serve. Can garnish with more green onion if desired.

This makes about 2 cups of eggs. Roughly 1/2 cup serving per person.Â
