Bacon Cheddar Scrambled Eggs

For the most part, my kids will eat anything I serve. Fruits, veggies, healthy fats, raw dairy and pasture raised animal protien, YES! A sweet dessert made with local honey or maple syrup? DEFINITELY! Eggs, on the other hand, are usually a struggle. A BIG struggle! Especially for my youngest. It may be a texture thing, I’m not sure.

What’s a Momma to do?

Eggs are the perfect breakfast food after all! Especially pasture raised eggs that come from happy chickens living outside in the sunshine on fresh green grass. Well, I took a few of their favorite foods, bacon and cheese, and I hid them in the eggs. Easy peasy!

This is how Momma Darlin makes scrambled eggs for her picky kiddos. Give it a try, you won’t be disappointed!

Bacon Cheddar Scrambled Eggs

For this recipe you will need:

  • Bacon (pasture raised)
  • Eggs (pasture raised)
  • Cheese (pasture raised, raw)
  • Green onion/scallions
  • Salt and pepper

Directions:

Start by cutting the bacon into bits.

Cutting the bacon with scissors is easier for me! I can even skip the step of getting a cutting board dirty 😉

Add the bacon to the pan and let it cook for about 10 minutes on medium heat.

This is after 5 minutes.
This is after a total of 10 minutes. Looks ready to me!

Turn burner to low. Using a slotted spoon, remove bacon and drain on paper towel lined plate. Be stronger than I am and try to refrain from eating any of the bacon bits! Its so much harder than it looks! Smells. So. Good!

Green onions/scallions add great flavor to the eggs! I add them while cooking and then add more on top!

Slice the green onions and add to the bacon grease in the pan. Let them dance for a minute while you crack the eggs in a bowl. Scramble the eggs up and add to the pan.

Pasture raised eggs offer the best nutrition. Try finding a farmer near by that raises their chickens outside on the grass and only feeds non GMO feed. These eggs can be found in super markets as well, but how cool is it to meet the chicken that gives you your eggs? I get some of mine from my Dad when he has extra’s. Thanks Dad!

Cook your eggs for about 5 to 10 minutes on low. When they’re done, its time to add the tasty mix-ins!

Add some cheese, salt, pepper and, of course, the bacon! (hopefully there’s some left!)

Bacon, Egg, Cheese, OH MY!

I like to plate it and then add some more green onions. I just love those things!
